🍎 This Apple Spiced Granola is perfectly crunchy, sweet and a quick go-to breakfast meal. It’s packed with @suncorefoods hemp seeds + coconut chips, nuts + seeds and warming spices + addition of apple! I tend to forget how easy it is to make my own granola at home 🤷🏻♀️❤️
Perfectly crunchy Apple Spiced Granola (v, gf)
Makes plenty ;) About enough for around 8-10 serves.
2 cups rolled oats
1 cup almonds, roughly chopped
1/4 cup hemps seeds (@suncorefoods)
1/4 cup puffed quinoa (optional)
2/3 cups coconut chips (@suncorefoods)
1/2 cup pepitas
2 tsp ground cinnamon / 1/2 tsp ground clove / 1/4 tsp nutmeg /
1/4 tsp salt
1 large apple, diced
1/3 cup coconut oil, melted
1/3 cup applesauce
1/3 cup maple syrup
1/2 tbsp vanilla extract
1. Preheat oven to 180C and line a tray.
2. Begin by mixing the oats, almonds, hemp seeds, puffed quinoa, pepitas, spices and the diced apple together in a bowl. In another bowl, add the remaining wet ingredients.
3. Mix the wet with the dry until combined and spread evenly on a baking tray (I had to use 2) and bake for 40-45 minutes and until golden brown. Flip and toss granola every 20 minutes tonsure even cooking.
4. Let cool for 20-30 minutes to get extra crispy and crunchy. Enjoy with fruits and plant milk!
