Hearty + Healthy Jackfruit Bulgogi (v,gf)

Using Amazonia’s new range of jackfruit, I had to give the quintessential Korean dish - Bulgogi, a go! Jackfruit has a very stringy and meaty texture which works amazing in dishes to replicate pulled pork or few other meats. Replicating bulgogi with jackfruit wasn’t too hard at all- it’s all about getting the marinade right! The marinade is very simple, it’s known for it’s sweet tangs and saltiness from soy sauce. Hearty + Healthy Jackfruit ‘Bulgogi’ (v, gf)

Ingredients

  • 300g jackfruit, drained (I used Amazonia Tender Jack)

  • ¼ cup soy sauce

  • 3 tbsp agave syrup

  • ½ tbsp sesame oil

  • 1 ½ tsp ground garlic

  • ¼ tsp white pepper

METHOD

  1. In a bowl, create your marinade: soy sauce, agave, sesame oil, garlic and pepper. Mix well.

  2. In another bowl, use your hands to break down the jackfruit into fine pieces/strands. Pour over the marinade and let sit for 10-20 minutes to absorb the flavour.

  3. Heat a pan to medium-high and cook jackfruit for 5-10 minutes, continually mixing until all liquid has evaporated/soaked in. Take off heat and serve as desired! I served it on some brown rice, greens and kimchi.
