Vegan Watermelon Poke (v,gf)

Super simple, not at all complicated and utterly delish! I wish I jumped onto the watermelon poke trend a little earlier because I. am. impressed! Eating watermelon savoury? Uh huh, it’s good!


Vegan Watermelon Poke (v,gf)

Makes 2-4 servings

  • 4 cups watermelon, cubed

  • 3 tbsp soy sauce

  • 2 tbs rice vinegar

  • 1 tbsp sesame oil

  • 1 tbsp tahini

  • 2 scallions, thinly sliced

  • 1tsp freshly grated ginger


  1. Begin by mixing all the ingredients for the sauce: soy sauce, rice vinegar, sesame oil, tahini, scallions and ginger. Mix well.

  2. Place your watermelon cubes into a bowl/bag and pour the sauce mixture into it, covering the watermelon. Let it sit in the marinade for up to 24hrs in the fridge.

  3. When ready to serve, ladle the watermelon cubes from the sauce and serve the way you like! I served it with Suncore quinoa, greens, cucumber, avocado and yellow capsicum. Enjoy!
