Wholesome Jackfruit Crab Cakes (v)

I was recently sent a whole box of Amazonia’s new Tender Jack range and here’s one of the recipes (many more to come! ) These Jackfruit Crab Cakes are wholesome and perfect little condiments for any meal. They’re succulent, flavourful and slightly addictive. I love cooking with jackfruit, it’s an incredible substitute for plant based cooking and works so well in plenty of dishes. Jackfruit Crab Cakes (v)

Makes 8-10 patties

  • 300g jackfruit, drained ( I used Amazonia plain jackfruit)

  • 1 green onion diced,

  • 150g tofu, drained

  • 1 garlic clove, minced

  • ½ tsp salt + pepper

  • 1 tsp mustard

  • ¼ cup oats, grinded into a course flour

  • 3 tbsp vegan mayo 

  • 1 tbsp lemon juice

  • ½ cup panko breadcrumbs

  • 1 tbsp old bay spice (homemade recipe below) 

Old Bay Spice

  • 1 tbsp celery salt

  • ⅛ tsp paprika

  • 1/16 tsp ground cayenne

  • ½ tsp ground mustard, nutmeg, cinnamon, cardom, allspice, cloves and ginger

  • Pinch of pepper


  1. Preheat the oven to 190C and line a baking tray

  2. Begin by breaking down the jackfruit and tofu with your hands or a fork to create a mushy mixture. Then add in all the ingredients except the breading and mix well.

  3. Form into patties using your hands. Coat in the breadcrumbs and place onto the baking tray. Bake for 20 min, flip, then cook for another 30 minutes or until golden brown

  4. Serve with vegan mayo and fresh parsley. Enjoy!
