The Best Vegan Carrot and Banana Cake Muffins (v)

Makes 12 smuffins

INGREDIENTS

  • 45g self-raising flour

  • 110g plain flour

  • 130g brown/ coconut sugar

  • ½ tsp mixed spice

  • ¼ tsp ground cinnamon

  • ½ tsp bi carb soda

  • 1/2 tbsp Suncore Foods Ebony Purple Carrot Powder (optional)

  • 50g coarsely chopped roasted walnuts

  • 155g grated carrot

  • 2 small flax eggs (1 tbsp ground flax + 2.5 tbsp water)

  • 150g mashed banana

  • 125g vegan butter, melted

METHOD

  1. Preheat oven to 150 C and line a muffin tin

  2. In a large bowl, sift the flours, sugar, spices and bi carb soda and mix. Stir in the nuts, carrot, flax egg, banana and melted vegan butter.

  3. Stir until just incorporated. Scoop  batter evenly into muffin tins and bake for 20-23min or until golden.

  4. Let cool for 5-10 minutes, eat and enjoy! :)
