Sunshine Pancakes (v,gf)

These pancakes are super simple to make; just chuck everything into the blender and viola, there you have it! While they may require a little more patience, they’re fluffy, soft and filled with heartwarming spices. I’ve been loving experimenting with quinoa flakes ever since I received them from Suncore Foods, they’re a great alternative for oats or can be turned into a flour by blending, which is the case for these pancakes.

  • ½ cup oats

  • ½ cup quinoa flakes // I used Suncore Foods

  • 1 tbsp chia seeds //  I used Suncore Foods

  • 3/4  tbsp turmeric powder //  I used Suncore Foods

  • 2 tsp ground cinnamon

  • Crack of black pepper

  • 2 tsp baking powder

  • ½ cup applesauce or mashed banana

  • 1 tbsp apple cider vinegar

  • ¾ cup soy mylk


  1. Start by blending your dry ingredients in a blender until the oats and quinoa flakes have become a fine flour

  2. Add in the rest of the ingredients and blend until just incorporated

  3. Heat a pan with some cooking oil to medium high and cook pancakes for 5-7 minutes or until golden and bubbles appear. Flip and cook for a remaining 3-4 minutes before stacking, serving with fruits + maple syrup and enjoy!

  4. I topped this stack with tahini, cinnamon fried apples (apple cubes fried on hot heat with cinnamon and coconut oil), maplye syrup (duh) and coconut chips!
