ALL-IN Nut Bars

I’m a huge sucker for any sort of chunky, crunchy nut bars. These nut bars are super easy to make and feature almost every nut and seed you can get your hands on ;)


All-in Nut Bars (v)

  • 2 cup rice puffs

  • 1 ⅓ cup dried cranberries

  • 2 heaping tbsp hemp seeds (I used @suncorefoods hemp seeds)

  • 3 heaping tbsp chia seeds (I used @suncorefoods white chia seeds)

  • 2 cups roasted cashews

  • 1 cup roasted almonds

  • ½ cup roasted walnuts

  • ½ cup roasted peanuts

  • ⅓ cup pepitas

  • ⅓ cup sunflower seeds

  • ⅔ cup rice malt syrup

  • 2 tbsp date syrup

  • 1 tsp vanilla essence


  1. Line a tray with baking paper and preheat your oven to 180C

  2. In a saucepan, bring the rice malt syrup and date syrup to a boil. Then let simmer for 10 minutes.

  3. In the meantime, combine all your roasted nuts, dried fruits, rice puffs, hemp seeds, chia seeds and the seeds in a bowl and mix. Set aside

  4. Quickly pour the mixture over the nuts (as it will harden) and toss to combine. Then transfer to a lined baking tray and using an oiled surface to press down firmly to pack all the nuts in. (Use a spatula or rolling pin to really compact down.)

  5. Bake the tray for 20 minutes and let cool before slicing and serving! (For a firmer texture, cook for 25 minutes on lower heat)

  6. Sprinkle some salt (game changer!)
