Simple Vegan + GF Quinoa Pancakes (v + gf)

Makes 1 serving (5-6 pancakes)

  • ½ cup quinoa flakes

  • ½ cup mashed banana (or applesauce)

  • 1 tsp baking soda

  • 2 tsp apple cider vinegar

  • 1 tsp vanilla

  • 1 tbsp maple syrup

  • ¼ cup soy milk


  1. In a food processor or blender, grind the quinoa flakes into a fine powder, quite like a flour

  2. In another bowl, add the quinoa flour, baking soda and mix together. Then add the mashed banana, acv, vanilla, maple syrup and soy milk. Mix well until combined.

  3. Heat a non stick pan to medium high. When hot enough, pour your pancake batter and let cook for 3-4 minutes or until golden brown edges form and bubbles at the top appear. Flip and cook for another 2-3 minutes, then transfer to a plate. Repeat for all the pancakes and top with bananas, jam, maple syrup, or anything else you desire. Enjoy!
