Not gonna lie, but these tofu scramble toasts are really considered a luxury during the school week. But because they are so damn good and such a hearty way to start the day, it’s always a happy sacrifice to make this for breakfast. Enjoy!
Ps- Black salt (akak Kala Namak) is completely optional and I understand that it’s quite hard to come across, but trust me, it seriously gives off an eggy taste and smell. So if you do have it on hand, make sure to usre plenty of it!

100g medium firm tofu
1/2 tsp turmeric powder
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp black pepper
1/4 tsp salt
Dash of chilli pepper
1-2 tbsp nutritional yeast
1/4 tsp kala namak (black salt)
Handful of baby spinach
2 slices of your fav toast
In a heated pan with coconut oil, place your tofu and mash to create chunks. Little and small are fine, the less perfect, the better.
Add in your spices (except the black salt and nutritional yeast) and mix until all combined, add water if you find everything is sticking to the pan.
Let cook for 3-5 minutes before adding in your greens and let wilt.
Turn the heat off and add your nutritional yeast, mix and serve on toast slices with avocado and tomatoes.
Sprinkle the black salt before eating for a super eggy taste. Enjoy!
