Simple Vegan Scones (v)

200g self raising flour
50g caster sugar
¼ tsp salt
½ tsp baking powder
55g vegan butter
90ml soy milk + more to brush on top
½ tsp vanilla
1 tbsp lemon juice
Preheat oven to 220C and line a baking tray
In a bowl, mix the flour, sugar, salt and baking powder together. Then add in the vegan butter and using your fingers or a fork, mix until it almost resembles wet sand.
Add in the soy milk, vanilla and fresh lemon juice. Knead until batter forms a dough
Flour your work surface and turn out your batter onto the surface. Pat into a rectangle and cut into rectangles or any desired shape
Transfer onto your baking tray and brush with additional soy milk. This will help it brown nicely. Optional but sprinkle some sugar just before popping into the oven for 15-20 minutes.
