These vegan date and walnut muffins are one of my fav recipes from my mum. They’re rich, sweet, fudgy and dense. Just make sure to keep an eye on the muffins when baking so they don’t burn since they contain high sugar content. Enjoy!!
Vegan Date and Walnut Muffins (v)
Makes 10-12 muffins

150g chopped dates
150g brown sugar
60g vegan butter
½ tso bicarb soda
300g self raising flour
55g chopped walnut
1 flax egg
Preheat oven to 180C and line a muffin tray
Combine dates, sugar, butter and 1 cup of water in a small saucepan. Stir on low heat for 1-2 min without boiling, until sugar dissolves. Bring to boil, then remove from heat and set aside to cool for 5 min
Sift flour into a bowl with bicarb soda and stir in date mixture, walnuts and flax egg. Place batter evenly into muffin tins and place into oven for approximately 25-30 minutes. Make sure not to burn the muffins as they contain high sugar content.
Remove from tin and let cool on cooling rack until cool. Best enjoyed warm with vegan ice cream!
