Raw Salted Tahini Caramel Slices (r,v,gf)

¼ cup soaked cashews
½ cup tahini
2 tbsp coconut butter, melted
2 tbsp agave or maple syrup
1 tsp vanilla
¼ tsp good quality salt
1 tbsp maca powder (optional)
1 tbsp hemp seeds
100g dark chocolate (I used 85% Lindt)
1 ½ tbs coconut oil
Line a square container or mold with parchment paper
In a food processor, add in the drained cashews and blend until broken down into fine pieces. I find blending the cashews first makes it much easier to blend the other ingredients. Then add in the remaining base ingredients and blend until a sticky dough begins to form.
Place dough into your lined container/mold and use your hands to press down into an even layer. Place into the freezer for 2-3 hours.
Using the double boiler method or the microwave, melt your chocolate and coconut oil together. Pour chocolate evenly on top of your base and sprinkle some good quality salt flakes before placing into freezer for a further 2 hours to set
Once set, take out of container/mold and slice into squares.
